Banana Muffins

    Maple sweetened banana muffins
    Servings: 12 muffins

    Ingredients
      

    • 1/3 cup Extra-virgin olive oil
    • 1/2 cup Maple syrup (or honey)
    • 2 Eggs (preferably room temperature)
    • 1 cup Mashed ripe Banana (~3 bananas, overflowing for extra moistness)
    • 1/4 cup Milk (any kind) (or water)
    • 1 tsp Baking soda
    • 1 tsp Vanilla Extract
    • 1/2 tsp Salt
    • 1/2 tsp Cinnamon (Optional extra to sprinkle on top)
    • 1 3/4 cups Whole wheat flour
    • 1/3 cup Oats (Optional extra to sprinkle on top)
    • Optional add-ins such as nuts, chocolate chips, or dried fruit

    Equipment

    • 1 Muffin pan
    • 1 Large mixing bowl

    Method
     

    1. If necessary, grease all 12 cups of your muffin tin with butter or non-stick cooking spray
    2. In a large bowl, mix the olive oil and maple syrup together with a whisk
    3. Add the eggs and combine thoroughly
    4. Mix in (in order) the mashed banana, milk, baking soda, vanilla extract, salt, and cinnamon
    5. Add flour and oats and mix with a large spoon or spatula
    6. (Optional) Add any mix-ins like nuts, chocolate chips, or dried fruit
    7. Preheat the oven to 325 degrees Fahrenheit
    8. Divide batter evenly between muffin cups
    9. Sprinkle tops of the muffins with any desired toppings (oats, cinnamon, turbinado sugar, etc.)
    10. Bake for 22-25 minutes until an inserted toothpick comes out clean

    Carrot Fritters

    Simple and healthy carrot fritters

    Ingredients
      

    • 1/2 lb carrots, grated
    • 1 small egg
    • 4 tbsp all-purpose flour (plus more if needed)
    • 1 clove garlic, grated
    • 1 tsp ground cumin
    • 1/2 tsp salt
    • 1/4 tsp pepper (optional)
    Yoghurt Hummus Dip
    • 1/3 cup hummus
    • 1/3 cup plain yoghurt (greek)
    • 1 tbsp lemon juice

    Method
     

    1. Preheat the oven to 400℉/200℃ and grease or line a baking sheet with parchment paper.
    2. Using a food processor or a box grater, grate the carrots, then drain and squeeze them with a paper towel to remove the excess moisture. Add them to a bowl.
    3. Add the remaining ingredients to the grated carrots and mix until well combined. If the mixture is still wet and difficult to handle, you might add more flour.
    4. Place a heaping tablespoon of the mixture on the baking sheet and flatten slightly with your hand. 
    5. Bake the fritters in the preheated oven for about 12 minutes, then turn them over and bake for a further 12 minutes, or until golden and crispy. Check your oven; the baking time might be slightly different.
    6. Yogurt-hummus dip: Make a super easy yogurt-hummus dip by simply mixing plain yogurt, hummus, and lemon juice.
    7. Serve the fritters with the yogurt-hummus dip. They're best when freshly baked, but they can also be served cold. Enjoy!
